Homemade Pure Matcha Soft Serve Ice Cream

Ingredients:

  • 1½ cups heavy whipping cream (cold)
  • 1½ cups whole milk (cold)
  • ¾ cup condensed milk
  • 2–3 tbsp Honestea & Co. matcha powder (Hana, Akari, or Kazune — sifted)
  • 2 tbsp fine white sugar (optional, adjust to taste)
  • 1 tsp pure vanilla extract (optional, for a slightly rounder flavour)


Instructions:

1. Prepare the Matcha Mixture

In a large bowl, sift the matcha powder to remove any clumps. Gradually whisk in the whole milk a little at a time, creating a smooth paste first, then thinning it into a liquid. (This ensures your soft serve is free from lumps.)

2. Blend Everything Together

Add the heavy cream, condensed milk, sugar (if using), and vanilla extract to the matcha mixture. Stir gently until everything is fully combined.

Pro Tip: Taste at this stage — if you want a slightly deeper matcha intensity, add another ½ tbsp of sifted matcha powder.

3. Chill Thoroughly

Cover the bowl and refrigerate the mixture for at least 4–6 hours, or overnight if possible. The colder the base, the smoother the final soft serve.

4. Churn into Soft Serve

Pour the chilled mixture into your ice cream maker and churn according to the machine's soft serve setting (usually about 15–20 minutes). For true soft serve texture, serve immediately. For a slightly firmer soft serve, freeze for another 30–45 minutes after churning before piping or scooping.


Alternative: No Ice Cream Maker? Here's an Easy Method.

If you don't have an ice cream machine, you can still create beautifully soft, creamy matcha soft serve with a little extra care:

1. Freeze and Whisk

  • Pour your chilled matcha mixture into a shallow, freezer-safe tray or loaf pan.
  • Freeze it for 30–45 minutes until the edges start to firm up but the centre is still soft.
  • Remove from freezer and vigorously whisk the mixture using a hand mixer, stand mixer, or sturdy whisk. Focus on breaking up any ice crystals while keeping the texture airy.

2. Repeat

  • Return to the freezer.
  • Every 30–45 minutes, take it out and whisk again.
  • Repeat this process 3–4 times over about 2–3 hours.

This manual churning prevents large ice crystals and mimics the smoothness of machine-churned soft serve.

3. Serve or Store

After the final whisk, your matcha soft serve should be ready to scoop! For a slightly firmer texture, let it freeze for an additional 30 minutes before piping or serving.

Pro Tip: If you like your soft serve extra airy, beat it with a hand mixer during the first two rounds of whisking.
