Jade Imperial is the one we keep for quiet mornings. Young, shade-grown first-flush leaves from Hubei are stone-milled into a jade-green powder with a velvet feel, smooth enough to need nothing added. Sift, whisk and let the umami linger. It makes an excellent latte too, though ours rarely gets that far.
